What's not to love about macaroni and cheese? Rich, creamy, and comforting, this version is perfect for kids and adults alike. I recently made this for a family event and people loved it! To give credit where credit is due, though, this is largely based on my mom's recipe. Give it a try, and let me know what you think.

Best Homemade Macaroni and Cheese

16 oz. penne pasta

1 stick butter

4 tbsp. flour

4 c. 1% milk

4 c. shredded cheese (a blend of sharp cheddar and colby jack is great)

Onion powder

Paprika

Preheat oven to 350 degrees.

Cook the pasta. Drain and set aside.

Melt the butter over high heat. Season with onion powder and paprika and add the flour, stirring constantly. Add the milk and continue to stir until mixture has thickened and begins to bubble. Then, add the cheese slowly, stirring to melt it as you add.

Once all the cheese has been added, pour the pasta and cheese sauce into a casserole dish. Top with paprika. Bake in the oven for 30 minutes or until heated through.

I also added a bit of sage to this particular batch of mac and cheese, hence the two dark spots in the photo above.

Macaroni and cheese is great because it can be a meal or a side dish, kids love it, and adults love it because it makes them feel like a kid again. Pasta and cheese; what else is better?

Obviously, homemade mac and cheese is the way to go, and recipes like this take hardly any time at all. When you're really strapped for time, though, boxed pasta is an acceptable alternative.
